- 2 lbs ground beef (80÷20 recommended)
- 1 cup breadcrumbs
- 1 cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1 teaspoon smoked paprika (optional)
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Preparation
Step 1
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Step 2
In a large bowl, combine the breadcrumbs and milk. Allow them to soak for about 2 minutes to soften.

Add the ground beef, onion, garlic, eggs, Worcestershire sauce, mustard, salt, pepper, thyme, and smoked paprika. Mix gently with your hands or a spoon until just combined. Avoid over-mixing to keep the meatloaf tender.

Transfer the mixture to the prepared baking sheet and shape it into a loaf, or press it gently into a loaf pan.

For the glaze, whisk together ketchup, brown sugar, and apple cider vinegar in a small bowl. Spread about half of the glaze evenly over the top of the meatloaf.

Bake for 45 minutes, then remove from the oven and spread the remaining glaze on top. Return to the oven and bake an additional 10 to 20 minutes, or until the internal temperature reaches 160°F (71°C).
